A wonderfully aromatic Spice Mix from the North Indian region of Kashmir with a hint of exoticism from Persia that heralds from the time when the Mughals settled in Kashmir.

Spice mix must be cooked before consumption.

Shopping List: (Serves 4)
• 600g diced lamb or diced chicken breast
• 4 tbsp vegetable oil
• 2 medium onions, diced
• 3 tbsp natural yoghurt
• 400g can chopped tomatoes
• 2 tbsp concentrated tomato purée

Method:
• Fry onions in vegetable oil until lightly browned.
• Add chicken or lamb and stir fry for 2-3 minutes.
• Add sachet of spice mix and stir fry for a further 2-3 minutes.
• Stir in tomatoes, yoghurt, tomato purée and 100ml water and continue cooking for 15-20 minutes.
• If using lamb cook for 1 to 11/2 hours on low heat until tender. Stir occasionally and add additional 100- 200ml water during cooking as required.
• Serve with basmati rice, naan breads and mint raita.
• Geeta’s Tip: Delicious cooked with lamb & traditionally served with brown pullao rice.
