CORIANDER MASALA STIR FRY

Serves 2-3. Tip: Garnish with chopped coriander and pomegranate seeds and serve with Naan bread or chappatis and Geeta’s Premium Mango Chutney

STEP BY STEP INSTRUCTIONS

step 1

Heat the oil in a wok and add the whole spices (leave out the chilli if you prefer a milder taste)

Add the sauce, vegetables and 1 tablespoon of water and stir fry on a medium heat for 5-6 minutes

step 2

When they start to crackle, add the paneer and gently stir fry for a few minutes

Ingredients

225g cubed paneer cheese (or diced chicken/seafood)

200g mixed vegetables (cauliflower, courgettes and yellow peppers)

1 pack Geeta’s Coriander Masala Sauce Kit

1 tablespoon water

2 tablespoons oil

Garnish: chopped coriander and pomegranate seeds

QUICK TIPS

  • Empty one tin chick peas (drain water)  into a large bowl
  • Mix heaped tablespoon of chopped cucumber, chopped tomatoes and chopped onions together.
  • Add one teaspoon of Geeta’s Lime & Chilli Chutney and 2 tablespoons chopped coriander mix well.
  • Add the salt and black pepper to taste.
  • Add your favourite vinaigrette dressing  and mix together when ready to serve.
  • This is delicious as a cool side salad with your  BBQ meats, fish or poultry
